* Always wash the meat when you buy from the supermarket or butcher. Especially if it is really bloody, then it probably needs to be rinsed off.
Dice the lamb first. Add salt, cardamom and crushed black pepper and set aside for 30 minutes for seasoning. The lamb absorbs all the flavor and aroma.
Heat up a frying pan and add oil. Then fry garlic, cinnamon, onion and cloves for about 4 minutes over medium heat.
Then return the lamb back to the pan. Stir around for about 3 minutes making sure to coat and mix the meat well with all the ingredients.
Reduce the heat a little bit and pour 1 ½ cups of water into the mix and add red chili powder, ginger, tomato and cook for about 25-30 minutes, until the meat has become tender.
Then add yogurt and garam maslala into pan and stir around until the gravy tickens.
Add coriander powder and simmer for another 5 minutes. Just before you turn off the heat add coriander leaves and cover the pan for about 2 minutes. This traps all the aromas and flavors within the pan.
You can also prepare the same dish with Beef, Mutton or Goat.
Best served with warm rice or Indian Naan bread.
